Ceylon cinnamon powder, Cinnamomum verum, comes from the inner bark of the Ceylon cinnamon tree, native to Sri Lanka. Often called “true cinnamon,” it has a delicate, naturally sweet flavor with subtle citrus and floral notes. Compared with cassia cinnamon, Ceylon cinnamon is generally lighter in color and has a softer, more complex flavor.

Ceylon cinnamon has been valued for centuries as both a culinary spice and traditional botanical. Sri Lanka, formerly known as Ceylon, has a long history of cinnamon cultivation, and the spice became an important commodity along ancient trade routes connecting Asia, the Middle East, and Europe. Its high value later made the cinnamon trade an important part of the island’s colonial history.

To produce the powder, the inner bark is carefully harvested, dried into thin quills, and finely ground. Ceylon cinnamon powder can be added to teas, baked goods, oatmeal, smoothies, spice blends, and both sweet and savory recipes. It is especially appreciated for adding warm cinnamon flavor without overpowering other ingredients.

Directions

To prepare as a tea, pour 8 oz. boiling water over 1 tsp. of herb. Cover and steep for 5-10 minutes, strain and serve immediately.
