Korintje cinnamon, Cinnamomum burmannii, is a variety of cassia cinnamon primarily grown in Indonesia, especially on the island of Sumatra. Known for its warm, sweet flavor and familiar cinnamon aroma, Korintje is one of the most widely used types of cinnamon in the United States. Its rich flavor makes it a favorite for teas, baked goods, spice blends, mulled drinks, and other culinary preparations.

Cinnamon has been valued for thousands of years as both a spice and traditional botanical. Historically, it was an important part of the international spice trade and was once considered a highly prized commodity. Indonesia remains one of the world's major cinnamon-producing regions, where the inner bark of the cinnamon tree is harvested and dried. As it dries, the bark naturally curls into the familiar sticks, or quills.

Korintje cinnamon is generally sweeter and smoother in flavor than some other cassia varieties, with a warm, slightly spicy finish. Whole sticks can be simmered in teas and other recipes or ground for use as a spice.

Directions

To prepare as a tea, pour 8 oz. boiling water over 1 tsp. of herb. Cover and steep for 5-10 minutes, strain and serve immediately.
